MOLECULAR SUSHI
LabViar pearls are concoctions of the best and natural prime ingredients available on the market. Our main ingredient “sodium alginate” is composed of algae-seaweed, making it not only 100% organic but also environmental friendly. Our pearls are produced following rigorous security processes for maintaining health and safety standards.
Spherification consists of sodium alginate and xantam gum bathed in calcium lactate to create a magical chemical-organic reaction. This allows us to obtain a texture equal to that of caviar whilst trapping the flavours of our most treasured sushi family ingredients.
To put it simply for you, LabViar pearls are drops of juices and sauces encapsulated in a thin alginate shell which burst in your palate, releasing their unique flavour and texture and appealing to all your five senses with every chopstick bite.

The Molecular Sushi team spent over 4 Months in Japan learning, respecting and understanding the long-standing tradition and roots behind this world re-knowned cuisine. Together we have over 20 years of solid experience working at prestigious and Michelin starred restaurants in Europe, but most importantly we are inspired by our “Love for Sushi.” Enshrining this motto in our profession, we continue to surprise ourselves with the quality and never-ending discovery of new flavours and ingenious ways of serving and bonding these flavours together. We pay special attention to the freshness of our ingredients and are eager to share our passion for healthy cuisine with our customers. The Japanese are famed for their long life expectancy, undoubtedly contributed to by their enviable diet of rice, fresh fish, seaweed and soya products. We admire the age preservation and skin perfection of the Japanese people and we believe that we have discovered the source of their fountain of youth.
